🍵🍫 Matcha Bliss Blondies
Soft, fudgy blondies with creamy white chocolate and smooth Japanese matcha.
Easy to make, café-style flavour, and perfect with a Matchaeco latte ☕✨
🛒 Ingredients (9×9 inch tin / ~16 squares)
- 115g unsalted butter
- 180g white chocolate, chopped
- 150g caster sugar
- 2 large eggs
- 1 tsp vanilla extract
- 4g Matchaeco matcha powder (about 2 tsp) 🌿
- 160g plain flour
- ½ tsp baking powder
- ¼ tsp salt
- 80g white chocolate chips
👩🍳 Method
1️⃣ Prep
Preheat oven to 170°C fan / 190°C conventional.
Line a 9×9 inch baking tin with parchment paper.
2️⃣ Melt
Melt butter and 180g white chocolate together
(microwave in 20-second bursts or over a bain-marie).
Stir until smooth, then cool for 5 minutes.
3️⃣ Mix Wet Ingredients
Whisk in caster sugar.
Add eggs one at a time, mixing well.
Stir in vanilla extract.
Mixture should look glossy and smooth ✨
4️⃣ Add Matcha
Sift in Matchaeco matcha to avoid clumps.
Mix until evenly green 💚
5️⃣ Fold Dry Ingredients
Add flour, baking powder, and salt.
Fold gently until just combined.
Stir in white chocolate chips.
⚠️ Don’t overmix!
6️⃣ Bake
Pour into prepared tin and smooth the top.
Bake 22–26 minutes until edges are set but centre is slightly soft.
Let cool completely before slicing.
7️⃣ Decorate (Optional)
Drizzle melted white chocolate and sprinkle strawberries or pistachios 🌸✨
Cut into squares and enjoy!
